Join us in the Teaching Kitchen at Under-Study for a hands-on pasta workshop led by PRESS Sous Chef, Franco Fugel. In this two-hour class, you’ll dive into the art of making cappelletti — a delicate filled pasta from Northern Italy known for its elegant shape and rich flavor.
Chef Franco will guide you through the entire process. You’ll learn how to mix, knead, and roll out the dough to the perfect thickness for filled pasta. From there, you’ll prepare a simple cheese-based filling, balancing flavor and texture to complement the pasta.
With dough and filling ready, you’ll practice cutting and shaping pasta sheets, learning the traditional folds that transform simple circles of dough into refined cappelletti. Along the way, Chef Franco will share professional tips and techniques to help you gain confidence with pasta-making at home — from achieving the right dough elasticity to forming consistent, well-sealed shapes.
As with all Under-Study experiences, the workshop begins with a welcome glass of Schramsberg Sparkling Wine. Following the class, guests will enjoy an Italian-inspired lunch with thoughtfully paired wines, featuring the pasta you’ve just created.
You’ll leave with the knowledge and skills to bring fresh, restaurant-quality pasta into your own kitchen.
